An exquisite botanical infusion inspired by the enclosed gardens of old estates, where fragrant herbs, medicinal flowers, and fruit-bearing hedgerows were cultivated in quiet abundance.
The Walled Garden is a beautifully layered composition of eight carefully selected botanicals, bringing together the brightness of coastal rose fruit, golden calendula blossoms, refreshing garden peppermint, and the deep, roasted character of chicory root.
The first infusion reveals a pleasantly tart, fruit-forward character, followed by delicate florals, cooling green herbs, and a mellow, earthy sweetness. Milky oat tops lend a soft, rounded quality, whilst sweet licorice root and crushed green cardamom seed introduce a lingering warmth and gentle aromatic complexity.
A most agreeable cup, equally suited to a quiet morning, an afternoon spent reading, or a long evening beside the fire.

A Study in Botanical Character
The Walled Garden draws upon the longstanding tradition of composing infusions from flowers, fruits, leaves, and roots, each selected for its particular character.
Rose fruit, calendula, and rose petals contribute a diverse collection of naturally occurring plant pigments and polyphenols. Peppermint and cardamom lend fragrant aromatic compounds, whilst oat tops, chicory, and licorice introduce the more grounding character of traditional herbal roots and meadow plants.
Together, these eight botanicals create a richly varied infusion, celebrating the sensory pleasures and botanical diversity of the traditional physic garden.

Each generously filled archival tin contains 100 g of our house-crafted botanical infusion, yielding approximately 50–60 cups when prepared using one teaspoon per serving.
Tucked beneath the lid, a reusable teabag fashioned from 100% organic cotton accompanies each tin, allowing the botanicals to steep freely while offering a beautiful, considered alternative to disposable tea filters.

01 | Coastal Rose Fruit
Rosa spp. | Fruit
Gathered in the spirit of the wild coastal hedgerow, rose fruit lends the infusion its bright, pleasantly tart character. Traditionally prized as a nutritive botanical, rose hips contain naturally occurring vitamin C, carotenoids, and an assortment of plant polyphenols. Their vivid fruit character provides the foundation upon which the remaining botanicals unfold.
02 | Golden Calendula Petals
Calendula officinalis | Flower
The golden blossoms of calendula have occupied a cherished place in the European physic garden for centuries. Valued by herbalists for their traditional applications, the petals contain naturally occurring carotenoids and flavonoids. Their delicate, slightly herbaceous character brings a soft floral dimension to the infusion.
03 | Garden Peppermint Leaf
Mentha × piperita | Leaf
A familiar inhabitant of the old kitchen garden, peppermint contributes its unmistakable coolness and verdant fragrance. Its leaves contain aromatic compounds, including menthol, alongside naturally occurring rosmarinic acid and other polyphenols. Long associated with after-dinner herbal infusions, peppermint lends a refreshing clarity to the composition.
04 | Roasted Chicory Root
Cichorium intybus | Root
An old-world botanical with a long history in European kitchens and herbal traditions. Chicory root naturally contains inulin, a prebiotic dietary fibre, although the amount retained in a strained infusion may be modest. Gently roasted, the root develops a beautifully earthy, toasted character reminiscent of dark grains and roasted coffee, lending depth without bitterness overwhelming the cup.
05 | Milky Oat Tops
Avena sativa | Immature Seed Heads
Harvested during their tender, milky stage, oat tops have long been treasured in Western herbal traditions as a gentle, nourishing plant. The immature seed heads contain an assortment of naturally occurring plant constituents, including phenolic compounds. Their contribution to the infusion is subtle and soft, lending a mellow, meadow-like character.
06 | Early Rose Petals

The fragrant petals of the early rose bring an ethereal floral note to the composition. Rose petals contain naturally occurring phenolic compounds and aromatic constituents, and have been celebrated for centuries in botanical waters, preserves, and fragrant infusions. Their presence softens the brighter fruit notes and introduces a delicate perfume.
07 | Sweet Licorice Root
Glycyrrhiza glabra | Root
A remarkable botanical root, esteemed since antiquity for its naturally sweet character. Its distinctive flavour arises largely from glycyrrhizin, a naturally occurring plant constituent, alongside flavonoids and other compounds. A small addition brings a rounded sweetness and lingering warmth, drawing together the fruit, flowers, and roasted roots.
08 | Crushed Green Cardamom Seed
Elettaria cardamomum | Seed
Enclosed within fragrant green pods, cardamom seeds possess an extraordinary aromatic complexity. Rich in volatile aromatic compounds, including 1,8-cineole and alpha-terpinyl acetate, they impart a delicate warmth with hints of citrus, eucalyptus, and sweet spice. Lightly crushed, the seeds lend an elegant finishing note.

The Daily Infusion
Steep 1 heaping teaspoon in freshly boiled water for 5–10 minutes, according to the desired strength.
Enjoy warm, allowing the floral and roasted notes to unfold as the infusion gently cools.
The Garden, After Hours
For a particularly delightful botanical refreshment, prepare a stronger infusion and allow it to cool. Serve over ice with sparkling water, a twist of citrus, and a fresh sprig of garden mint.
